One mill in Yepes pressed this Cornicabra over the 2025–26 harvest and it has been resting in their tanks since. We are ordering a single consignment, filled to order, and splitting it between everyone on this list. Tell us how much you would take.

A place in La Mancha

Yepes sits on the Mesa de Ocaña, a limestone plateau in the north-east of Toledo province that stands a hundred metres above the Tagus valley and runs south into the Manchegan plain. About 5,800 people, roughly 700 metres up, hot dry summers and hard winters. Thin calcareous soil gives small fruit and concentrated oil.

In fairness to the plain: Yepes has no famous windmills. Those stand further south, at Consuegra and Campo de Criptana. What it does have is a walled old town, a Plaza Mayor and olives.

This tank

Pressed in the 2025–26 campaign and held in bulk since. That is how good oil is normally kept before filling — sealed, cool and dark — which means what you collect will have spent far less time in its container than a bottle of the same age off a shelf.


What Cornicabra tastes like

Cornicabra is the olive of Castilla-La Mancha, named after the goat-horn curve of the fruit. It is rarely sold unblended outside Spain, which is most of the reason we are doing this at all.

Picked late, through December and January, it comes out rounder than an early-harvest oil: less grass, more ripe fruit, a gentler finish. Easier to use every day than the fiercely bitter Italian and Greek monovarietals.

Why this variety

Across 181 oils measured over five seasons, Cornicabra averaged 80.4% oleic acid against 4.5% linoleic. Linoleic is the part that goes rancid, and it oxidises tens of times faster. That ratio is roughly two times what a keeping oil like Coratina manages.

The same chemistry shows up on the bench: Cornicabra and Picual both hold past 55 hours on the Rancimat stability test, where Arbequina sits nearer 30.

Which is the practical case for buying five litres of it. It survives a kitchen shelf, and it behaves in a hot pan, so it can be the oil you cook with rather than the expensive one you save for salad.

You collect it in Wageningen

There are no home deliveries. The consignment arrives as one pallet and is handed over on a single announced date. If you cannot make it, send someone with your name.

Bring a bag or a bike crate that takes the weight — a full five litre garrafa is close to five kilos.
